I don’t know about you, but I am a bit picky when it comes to potato salad. We often pick up a tub of pre-made potato salad from the supermarket and sometimes it’s good, and often times it’s not. It can be too mayonnaisey, too mushy, too hard, too vinegary….you get the picture.
This homemade potato salad recipe is just perfect!
The recipe comes from my Dad, Richard. I haven’t talked about my Dad too much so let me introduce you. My Dad was in the Navy for 25 years and then became a personal chief for a few years before he retired. He is an amazing cook who loves to use fresh ingredients.
I owe a lot to my Dad. He gave me a wonderful, stable childhood with loving family memories. I also have him to thank for my love of music and for the fact that I am a pianist. If it wasn’t for him pushing me to practice, I wouldn’t be able to play like I can today!
Anyway…..Back to the food! This homemade potato salad recipe is from my Dad and it is delicious! To me, it’s the perfect combination of everything. And adding hard bowled egg just makes it so perfect!
The first step is to boil the potatoes. To me, this is the trickiest part. You want the consistency just right – not too hard and not too soft. It should usually take about 10-20 minutes, and you can test them by poking one with a fork. It should have a little resistance but be able to go into the potato.
Boil the potatoes with the skins on and after they have cooled enough so you can handle them, tear off the skins and cut the potato into bite size pieces. Add the vinegar and mix. Add the onions and mix.
Then, in a separate bowl, mix the mayo, salt, sugar, mustard and celery seed. Pour the mixture into the bowl with the potatoes. Gently mix with your hands. Add the hard boiled eggs and paprika and that’s it! Wonderfully delicious, simple homemade potato salad!
- 2-1/2 cups hard boiled, peeled and sliced potatoes
- 1 tablespoon vinegar
- 1/2 cup chopped onion
- 3/4 cup mayonnaise
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon mustard
- 1/2 teaspoon celery seed
- Paprika sprinkled on the top
- 2 hard boiled eggs
- While the potatoes are still warm, add 1 tablespoon of vinegar and toss.
- Add onions and toss again.
- In a separate bow, combine the mayo, salt, sugar, mustard, and celery seed.
- Pour over the potatoes and onions and toss.
- Fold in the sliced hard boiled eggs.
- Sprinkle paprika over the top.
- Chill and serve!
